In today’s video I made peanut butter cookies which is a really special treat for me and the reason for that can be found in my ever-growing love for America. I’ve already had a little rant about this in my muffin recipe post and sure enough, I feel one step closer to the Land of the Free by preparing something so typically American. The story goes further, though because I first came across this cookie in a really exciting novel I read in English. The vibe that attached to this yummy dessert completely enchanted me and I just had to grab a wooden spoon to make it. We could probably say that the hardest evidence of a writer’s talent is when the reader gets under the spell of the story so much that the inspiration turns into action in their real lives.
While baking, I kind of turn into the main character of that book I read, while the sweet and nutty smell of the cookies fill every inch of the kitchen. This is the kind of dessert that doesn’t require any difficult steps so let that relaxed smile take over your face. The best thing of all is definitely the part when my sweet and loving fiancé lets out a happy hum as he bites into the warm and crunchy cookies. I can’t get enough of the happiness it brings me. What you need
192 g plain white flour
1 tsp baking soda
a pinch of salt
113 g unsalted butter (soft)
64 g granulated white sugar
64 g brown sugar
1/2 tsp vanilla extract
200 g + 2 tbsp crunchy peanut butter
What you do
Preheat your oven at 180 degrees Celsius. Put baking paper on a large baking tray. Set aside.
With the help of a standing or electric hand mixer, cream together the softened butter and the two sugars. Add the egg and beat until combined. Don’t forget to scrape down the sides of the bowl so that all the dough is incorporated.
Next add the peanut butter and vanilla extract. Don’t be surprised if the dough seems heavy to mix. This is the way it’s supposed to be. In a few minutes it’ll be fully incorporated and smooth.
Add the baking soda and the salt to the flour. Mix them together. Then little by little add the dry ingredients to the peanut butter-sugar-egg mixture. Mix well. It’s gonna get heavy to mi but it’s okay. Just stick with it. 🙂
Form balls out of the dough depending on how big or little you want your cookies to be. Between the palm of your hands push the cookie dough down to create a flat disk. Place cookie on baking tray.
Use a fork to create a stamp. Push a vertical then horizontal line with the back of the fork.
Bake cookies for about 15 to 20 minutes or until the edges get golden brown. Let them cool and serve warm or cold. 🙂 Your friends and family will live these! (It gets even better with a glass of cold milk!)
